PAPA A LA HUANCAINA- POTATOES WITH HUANCAINA SAUCE - KROMPIR Z OMAKO HUANCAINO

Pripravite super okusno perujsko jed s čilijevo omako Ají Amarillo. Ime te jedi je “Papa a la huancaína” in v Peruju, kjer je zelo popularna, jo postrežejo kot predjed.
Za 6 porcij potrebujete:
- 1 kg. kuhanega krompirja
- 1 ali 2 žlici Ají omake “COEXITO” (odvisno Koliko pikantno želite)
- 1/3 vijolične 🧅
- 200 g. belega svežega sira (npr. feta)
- 6 slanih krekerjev
- 1 skodelica mleka v prahu "Carnation"
- ¼ skodelice rastlinskega ali olivno olja
- Sol in poper po okusu
- Črne olive
- 3 kuhana 🥚
- Listi solate
Priprava 👩🏻🍳:
Za omako Huancaína najprej v ponev nalijemo nekaj olja in nekaj minut pražimo s čebulo in pasto ají. Pustite, da se ohladi, nato pa v mešalnik dajte mleko, olje, krekerje, sir, čebulo, sol in poper ter pasto ají s čebulo. Na krožnik postrezite dva lista solate in na vsak list položite polovico krompirja (na 1 cm debele kolobarje narezanega). Krompir prelijemo z Ají omako iz blenderja, na vrh položimo polovico kuhanega jajca in okrasimo s črno olivo. Všeč vam bo pristen in drugačen okus te jedi. Dobrodošli v Peru 🇵🇪!

Prepare a super delicious Peruvian dish with the chili paste: Ají Amarillo. The name of this dish is: Papa a la Huancaína and it is served as a starter. It is very representative of Peruvian cuisine.
You need for 6 portions:
- 1 kg. cooked white or yellow potatoe
- 2 tbsp. of ají paste “COEXITO” (depends on how much spiciness you like)
- 1/3 purple 🧅
- 200 g. white fresh cheese (feta or white)
- 6 salty crackers
- 1 cup of evaporated milk "Carnation"
- ¼ cup vegetable or olive oil
-🧂 & pepper to taste
- Black olives
- 3 Boiled 🥚
- Lettuce leaves
Preparation 👩🏻🍳:
For the Huancaína sauce, first put some oil in a pan and fry the onion and the aji paste for some minutes. Let it cool and in a blender put this ají paste, milk, oil, crackers, cheese, 🧅, salt & pepper and ají paste with 🧅. Blend it well. Serve two lettuce leaves on a plate and put half of the potato on each leaf. Serve the ají sauce over the potatoes and put over half of the boiled egg and decorate with a black olive. You will love the authentic and different taste of this dish directly from Peru!
