Mole is a traditional Mexican sauce made with nuts, dried chilies, spices & chocolate, and mole verde is a variety of mole prepared with pumpkin seeds, green chilies, spices and some green aromatic herbs. It is also known as "pipián verde" and it is commonly prepared with chicken or pork and red rice as a side dish.
