Delicious Shrimp Soup with Guajillo
Raise your hands if you love shrimps. Ok! I know, maybe not everyone is a seafood lover around here. Please, believe me when I tell you that this delicious shrimp soup with guajillo is on a different level from what you might know.
The first thing is to get fresh shrimp. Preferably not the frozen ones (but if you cannot get the fresh ones, these are also ok). Shrimps' head is what gives the best of the flavor to our soup. You can also add shrimp seasoning, which you can find in any Asian store.
I'm cheering so much about fresh shrimps. Yet, in this shrimp soup recipe, I did not use any fresh shrimps; I had to opt for the frozen ones :/
Where I come from, seafood is a regular thing, like eating fresh seafood every day. By the way, be happy if you have a pescatarian diet because this recipe will win your heart.
Guajillo, one of the main ingredients for this recipe is not a spicy chili; if you, of course, add a moderated amount. We're going to add only two guajillos.

What you will need:
500gr shrimps
2 dried guajillo chilies
150gr chickpeas
2 Potatoes (cut into small pieces)
3 Carrots (Cut into small pieces)
1 whole onion
3 garlic cloves
Coriander
Olive oil
Pepper and salt
Lemon or lime
Soak in water one night before the chickpeas or at least 5 hrs before. Cook the chickpeas with a laurel leaf and salt for 45 to 50 minutes. Set this aside.
Put some water to boil, add the guajillos, onion, and garlic. Boil for 5 minutes. Bled the ingredients and set them aside.
In a pot, add the potatoes, carrots, olive oil, pepper, and salt. After 5 minutes, add the shrimps and let them cook for another 5 minutes. Add the chickpeas and slowly, pour inside the pot the chili paste and cook for ten more minutes.
This dish is best together with some white rice. And last but not least, do not forget to add lemon juice to your soup. It gives a proper Mexican touch.
Suppose you are afraid of getting a spicy soup (which, by the way, you will not), but just in case, you can add one guajillo or non. Instead, add chop tomatoes or pelati to add color to this dish. You will not regret this ;)
This dish is an exotic must-try. Please do not be shy; dare to get out of your comfort zone; it is good from time to time to be bold.
