Sestavine za 3 porcije:
🍊 ½ piščančji prsi
🍊1,5 skodelice pomarančnega soka
🍊 ½ skodelice belega kisa
🍊50 g paste iz ahiote
🍊1 strok česna
🍊3 čiliji guajillo
🍊1 žlica olja
🍊1 ščepec soli
🍊½ rdeče čebule
🍊 3 limone
🍊 2 papriki habanero (lahko sta posušeni)
KAKO:
1. Najprej ocvrite celotne piščančje prsi. Vsake toliko časa jih obrnite, da bodo čisto zaprta. To počnite 15 minut.
2. Medtem “očistite” čilije guajillo in jih za pet minut namočite v toplo vodo.
3. Nato rdečo čebulo in čili habaneto narežite na trakove, jih dajte v manjšo skledo in dodajte sok limon ter žličko soli. Tako se bodo sestavine popolnoma zmešale. Pustite jih marinirati eno uro.
4. Po 5 minutah namakanja čilija, ga dajte v mešalnik skupaj s pomarančnim sokom, pasto ahiote, belim kisom, česnom in ščepcem soli. Vse zmeljite in mešajte, dokler ne dobite enotne omake.
5. Ko je piščnec dobro zaprt in omaka prirpavljena, ga prelijte z omako in pustite, da se na nizki temeperaturi kuha približno 45 minut, dokler piščanec ni popolnoma kuhan.
6. Po preteklem času ponev odstavite z ognja, piščanca zdrobite in mu dodajte omako in mesni sok, ki sta ostala v ponvi.
7. Pripravljeno je! Postrezite ga v tacosu z nekaj koruznimi tortiljami in z mešanico čebule in čilija na vrhu. Dober tek 😋!

“Cochinita pibil” is a traditional dish from Yucatán, 🇲🇽 made mainly with pork, but this time we made it with chicken and it is also very delicious 👌!
Ingredients for 3 portions:
🍊 1/2 chicken breast
🍊 1.5 cups orange juice
🍊 1/2 cup white vinegar
🍊 50 g. achiote paste
🍊 1 garlic clove
🍊 3 guajillo chilies
🍊 1 tbsp. oil
🍊 1 pinch of salt
🍊 ½ red onion
🍊 3 lemons
🍊 2 habanero peppers (they can be dried)
How to:
1. First fry the whole chicken breast. Change its position every so often so that the meat is completely sealed. Do this for 15 minutes.
2. Meanwhile, “clean” the guajillo chilies and soak them in warm water for five minutes.
3. Then slice the red onion and the habanero chili in strips, place them in a small bowl and add the juice of the lemons together with a tsp. of salt. This will make these ingredients to perfectly blend together. Leave them marinating for one hour.
4. After soaking the chilies for 5 minutes, place them in the blender along with the orange juice, achiote paste, white vinegar, garlic and a pinch of salt. Grind everything, blending until we have a uniform sauce.
5. Once the chicken is well sealed and the sauce is ready, pour the sauce over the chicken and let it cook over low heat for approximately 45 minutes until the chicken is completely cooked.
6. Once this time has passed, remove the pan from the heat and shred the chicken, adding the sauce and meat juices left in the pan.
7. Its READY! Serve it in tacos with some corn tortillas and with the onion-chili mix on the top. ¡Buen Provecho😋!
Omaka:
🌶 1 žlica rastlinskega olja
🌶 2 čilija morita
🌶 1 vrečka rjavega fižola “ISADORA”
🌶 ¼ skodelice (ali več) piščančje juhe
🌶 posušena metlika (epazote)
🌶 sol in poper po okusu
🌶 ½ skodelice drobno sesekljane čebule
🌶 1 skodelica na koščke narezanega piščanca
🌶 6 koruznih tortilj “KOMALI”
Za dekoracijo: rdeča čebula, avokado, beli sir in kisla smetana.
Priprava:
1. Za fižolovo omako v ponvi na vročem olju prepražite čebulo, dokler ne porumeni. Dodajte čili morita, črni fižol, piščančjo juho in posušeno metliko (epazote) ter kuhajte 6 minut. Zmešajte in vrnite na ogenj, začinite s soljo in kuhajte še 5 minut. Odstavite.
2. V ponvi na vročem olju prepražite čebulo, dodajte pščanca, začinite s soljo in poprom ter pražite dokler se ne obarva zlato rjavo.
3. Tortiljo položite na desko, dodajte nadev in jo zvijete ter ponavljajte, dokler ne končate z nadevom. V ponvi z dovolj vročega olja ocvrite tacose, jih odcedite in postavite na stran. Zlate tacose lahko spečete v zračnem cvrtniku z malo olja v spreju in jih cvrete 5 minut oziroma dokler ne postanejo zlato rjavi.
4. Položite na krožnik, prelijte s fižolovo omako in postrezite s smetano, sirom, čebulo in avokadom.

For 2 you need 👇🏼
Sauce:
🌶 1 sp. of veg. oil
🌶 2 morita chilis
🌶 1 pouch of whole brown beans “ISADORA”
🌶 ¼ cup (or more) chicken´s broth
🌶Dried epazote
🌶 Salt & pepper
🌶 ½ cups of finely chopped onion
🌶 1 cup of shredded chicken
🌶 6 corn tortillas “KOMALI”
For decoration: Purple onion, avocado, white cheese and sour cream.
Preparation:
1. For the bean sauce, in a saucepan with hot oil sauté the onion until it is sufficiently browned, add the chilis, black beans, chicken´s broth and epazote, cook for 6 minutes. Blend and return to the heat, season with salt and cook for 5 more minutes. Set aside.
2. In a frying pan with hot oil, sauté the onion, add the chicken; season with salt and pepper and cook until golden brown.
3. Place the tortilla on a board, add the filling and roll up, repeat until the filling is done. In a frying pan with enough hot oil, fry the tacos, drain and set aside. You can fry your golden tacos in the air fryer with just a little oil spray and fry for 5 minutes or until golden brown.
4. Place on a plate, cover with bean sauce and serve with cream, cheese, onion and avocado.

Priprava: Omako pripravimo tako, da zmešamo Mole, 3,5 skodelice jušne osnove, žlico arašidovega masla in 90 g mehiške tmne čokolade ali čokolade v prahu. Postavite v ponev in segrejte na srednje visoki temperaturi. Vsako totiljo posebej pocvrite v olju in jo nadevajte z mesom. 3 prepognjene tortilje postavite na krožnik, prelijte z omako Mole in dekorirajte s kislo smetano, naribanim sirom in čebulnimi obročki. Zraven se super prileže riž in kozarec rdečega vina. Dober tek.

You need:
🤎 1 glass of Mole Doña María
🤎 1 cooked and shredded chicken breast
To decorate:
🤎 Sour cream, white cheese and onion slices
Preparation:
To prepare the mole, mix it with 3.5 cups of chicken broth, a tbsp. of peanut butter and 90 g. of Mexican chocolate or 2 spoons of chocolate powder. Put in a pot at medium heat and mix it well. Fry each tortilla in some oil and fill each one with some shredded chicken. Put three enchiladas on a plate and pour over some mole sauce. Decorate with some sour cream, grounded cheese and onion slices. You can complement this dish with red or white rice. Enjoy 😋!

Green tomatillo sauce is one of the most popular spicy 🔥 sauces in Mexico 🇲🇽. Ideal for tacos, quesadillas, chilaquiles, enchiladas, etc. In Slovenia there is no fresh green tomatillo, but don´t worry as you can prepare it easily at your home with our canned green tomatillo.
You need:
🌶 A piece of onion
🌶 One or two garlic cloves
🌶 600 g. canned green tomatillos (drained)
🌶 Some water or chicken´s broth
🌶 Dried “chili de árbol” to taste
🌶 Some oil
🌶 Salt and pepper to taste
Preparation steps:
1. In a blender mix all the ingredients and add ¼ cup of water or chicken broth (this will give more taste). Season with salt, pepper or a chicken´s broth cube.
2. In a hot pan, put some one spoon of oil and put the sauce inside at medium heat until it begins to boil. Let it heat for some more minutes and remove it from the heat.
3. Ready! Add it to your tacos, sopes, or your favourite dish.

If you don´t know what to have for breakfast, “molletes” are always a good and easy idea 😋.
Just fry some chopped onion with a bit of oil, then add black or light beans “Isadora” let them heat for some minutes, add salt and pepper to taste. Then cut some mini white or whole wheat breads in halves, spread some beans over and put a tilsiter or gouda cheese slice on the top.
Put them in the oven until the cheese melts and serve with your favorite spicy sauce or “pico de gallo” (chopped tomato, coriander, onion and chili) with some olive oil, salt, pepper, and lemon juice.
